Abstract

Considerable interest has been generated recently in the qualitative and quantitative aspects of complex carbohydrates and fiber of dietary articles in their impact on human health and diseases. In an earlier report we have shown that carbohydrate rich diets like rice, millets or tapioca given to healthy individuals for 15 days did not alter the glycemic response (after oral glucose loading) as compared to dn isocaioric wheat based background diet. However these foods showed a significant beneficial effect on plasma cholesterol profile.
