Abstract

Almost all the soybean produced in India is processed to oil and meal. The oil thus obtained is used as edible oil Soybean oil is highly polyunsaturated and its polyunsaturated to saturated fatty acid ratio is 3.81 which in next to sunflower oil among the commonly consumed edible oils.
