Abstract

Potato (Solanum tubrosum) is one of the few foods that are capable of nourishing the great populations of the world. Beneath its skin are liberal stores of not only energy but also of nitrogen, high quality protein, valuable minerals such as iron and magnesium and essential vitamins.
