Abstract

It is generally agreed that at least 45 chemical compounds and elements are needed by human cells. The absence of any can lead to illness and eventually death. Since the population of the Middle East is almost 160 million for some 20 countries, with each country and each age group having a somewhat different dietary pattern it is necessary to make considerable generalizations concerning the nutritional quality of the available food.
