Abstract

The Reactive Oxygen Species (ROS) can be harmful to cells, as it can cause oxidative damage to lipids, proteins and DNA. Standard antioxidants like Butyiated Hydroxy Anisole (BHA) and Butyiated Hydroxy Toulene (BHT) are effective but their toxicity and unwanted side effects rules out their human use. Turmerin, an antioxidant protein from Turmeric (Curcuma tonga) is known to be an effective antioxidant. Further search for antioxidant proteins of turmeric led to the discovery of a new giyco- protein antioxidant from boiling water extract of Turmeric (Curcuma tonga L).
