Abstract

This book on the evaluation of proteins for humans contains current information on the use of proteins in human feeding. The book deals with nutritional evaluation and the utilization of protein resources, protein and amino acid metabolism, requirement in relation to quality, methods of estimating protein value on humans, and effect of supplementation, fortification and processing. The book also deals with anti nutritional factors found in food.
