Abstract

Pulses occupy an important place in Indian dietaries. Being rich in proteins, they are the main sources of proteins to a vast majority of the population. The myth of high biological value proteins being present only in animal foods has now been exploded; in fact pulses' contain more proteins than eggs, fishes and flesh foods.
