The manual entitled, "Food Quality Assurance" by Wilbur A. Gould is a compilation of information developed for food product evaluation Each chapter of this book deals with basic information on the major food quality attributes such as quality control, evaluation and assurance, container evaluation, brines, syrups and specific gravity, flavour, odour, physical evaluation of colour, size, shape texture, viscosity and enzyme activity.
