Abstract

Microwaves and their neighbours in the electromagnetic spectrum are energy sources which may be tapped for specialised tasks. While dramatic application of microwave heating are in store for industries, many hurdles need to be passed before their large-scale application could be made in regard to food. Microwave ovens are available today, but they pose many practical problems.
