Abstract

In this comprehensive book 'Modern Methods of Food Analysis' the authors have successfully endeavoured to bring up-to-date Albert E. Leach's "Food Inspection and Analysis", both by including newer methods where these were believed to be superior, and by assembling much new analytical data on the composition of authentic samples of the various classes of foods.
